Hearty Overnight Oatmeal

 
I just can't bring myself to call this recipe Meusli, though that's what is it.  Something about that word bugs me.  I don't know why, I just find it unappetizing.  Anyway ... While the measurements for the oats and liquid are important, the rest of it is according to taste, and you can substitute any dried fruit, nuts or seed that your family likes.  I usually just let the kids choose a few things each from the pantry, and tell them "Add a handful of each to the bowl".  we have great fun making this different each time we make it together.

Serves 3-4

Ingredients:
1 cup rolled oats
1 cup milk (or almond milk, or even Apple juice)
1 tbsp chia seeds
1 spoonful raisins
1 spoonful dried currants
1 spoonful pumpkin seeds
1 spoonful sunflower seeds
1 spoonful slivered almonds 
2 tbsp honey 
A pinch of salt
A pinch of cinnamon

Combine all of the ingredients in bowl or container, stir to combine, and place in the fridge overnight.  Serve cold, straight from the fridge.
